Chicken Soft Tacos Trial: Gluten-free, Dairy-free, Nut-free
This week when I was planning my meal schedule, I wanted something easy, yet slightly different from what we normally have. Thankfully, Chicken Soft Tacos from The Complete Allergy-Free Comfort Foods Cookbook by Elizabeth Gordon delivered just what I was looking for.
The Changes
As the title implies, this recipe is already Joseph-safe. I still adapted the recipe a bit. I forgot to buy a lime at the store, so I had planned on putting in lime juice. Then I completely forgot to add that and the pepper to the meat before cooking. We also used different toppings than Gordon did.
The Method
Heat oil in a large skillet over medium-high heat. Meanwhile, in a bowl, stir together chicken and spices until well mixed.
Add chicken to the heated oil, breaking it up as it cooks.
Serve with corn tortillas (warmed in the microwave), Daiya cheese, and lettuce

Gluten-free, Dairy-free, Nut-free
Ingredients:
- 2 teaspoons olive oil
- 1 lb ground chicken
- 1/2 teaspoon salt
- 1 teaspoon cumin
- pinch cayenne pepper
- 1/4 cup chopped cilantro
- corn tortillas
- Daiya cheese
- lettuce
Heat oil in a large skillet over medium-high heat. Meanwhile, in a large bowl, stir together chicken, salt, cumin, pepper, and cilantro until well mixed. Add to the oil, breaking the meat apart as it cooks.
Serve chicken with corn tortillas, daiya cheese, lettuce, and any other toppings you desire.

What I Thought
This chicken was pleasant tasting, very mild on the heat scale. My husband and I had ours with real cheese and flour tortillas. While Joseph had the above allergy-friendly plate, all he ate was the meat and cheese. His sister was only interested in the cheese and tortilla. It’s something I’d do again.
